Pear

2 medium

Ground Cinnamon

Lemon Juice, Fresh

20 ml

Honey

1 tablespoon(s), level

Low Fat Spread

50 g

Egg, whole, raw

2 medium, raw

Low Fat Natural Yogurt

150 g

Wholemeal Flour

175 g

Porridge oats

90 g

Baking powder

1 teaspoon(s), level

Bicarbonate of Soda

1 teaspoon(s), level

Preheat the oven to 180°C, fan 160°C, gas mark 4. Line a 12-hole muffin tin with paper cases. Soften the pears in a pan with the ground cinnamon, lemon juice and a splash of water, for 10 minutes.

Drain, then stir in the honey and low-fat spread. Let cool. Meanwhile, mix the eggs and yogurt in a jug.

In a bowl, combine the wholemeal flour, oats, bicarbonate of soda and baking powder. Stir the pear mixture into the jug; pour into the dry ingredients and stir.

Spoon into the cases, sprinkle over the oats. Bake for 20-25 minutes.
