Ingredients

Porridge oats

125 g

Maple Syrup

2 tablespoon(s)

Egg, whole, raw

3 medium, raw, beaten

Baking powder

1 teaspoon(s), level

0% fat natural Greek yogurt

440 g, 200g, plus 240g to serve

French almond extract

½ teaspoon(s)

Vanilla Extract

1 teaspoon(s), level

Peach

2 medium, thickly sliced

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the porridge oats, maple syrup, eggs, baking powder, 200g yogurt, almond extract and vanilla extract into a bowl and stir well to combine.
  2. Tip the mixture into a 1-litre ovenproof dish and arrange the peach slices over the top of the oat mixture, pressing each slice into the oats. Bake for 30 minutes, until golden, then serve with the remaining yogurt.
