The sweet and salty combo of peaches and prosciutto finds its home on a bed of rocket that’s drizzled with a tart balsamic glaze. Peaches not in season? Try fresh figs.

Ingredients

Prosciutto

6 slice(s), cut into quarters

Peach

3 medium, cut into 24 wedges

Rocket

150 g

Onion

1 medium, sliced into thin slivers

Balsamic glaze

2 tablespoon(s)

Olive Oil

2 tablespoon(s)

Instructions

  1. Wrap one quarter of prosciutto around each peach wedge. In a large bowl, toss together the rocket, onion and 2 tablespoons of olive oil. Season with salt and pepper.
  2. Divide the rocket mixture between 4 plates and top each plate with six prosciutto wrapped peaches. Drizzle the plates with the balsamic glaze and serve
