Ready-cooked ham is a great standby ingredient that you can use in this super quick soup.

Ingredients

Onion

1 large, chopped

Potatoes, Raw

1 portion(s), large, chopped

Peas, fresh or frozen

450 g

Mint, Fresh

2 tablespoon(s), chopped

Wafer thin ham

125 g, chopped

Chicken stock cube(s)

1 cube(s), 800ml

Instructions

  1. Put 800ml chicken stock, the onion, potato and peas in a medium pan. Bring to the boil, then reduce the heat and simmer for 10 minutes or until the potato is tender.
  2. Stir in the fresh mint and use a stick blender to process until smooth, reserving some of the peas before blending.
  3. Stir in most of the ham and heat through. Serve garnished with the reserved peas and remaining ham.
