Pea houmous with pickled red onions

Ingredients
Red wine vinegar
60 ml
Honey
½ tablespoon(s), level
Salt
½ teaspoon(s)
Red onion
½ small, finely sliced
Peas, fresh or frozen
400 g, defrosted
Lemon Juice, Fresh
1 tablespoon(s)
Tahini paste (sesame paste)
1 tablespoon(s)
Garlic
1 clove(s), crushed
Olive Oil
2 teaspoon(s)
Ground Cumin
¼ teaspoon(s), level
Instructions

To make the pickled onions, warm red wine vinegar, honey and salt until the honey has dissolved. Allow to cool, then put red onion into a bowl and pour the vinegar over. Cover and allow to marinate for 30 minutes.

Put defrosted frozen peas, lemon juice, tahini and garlic clove into a food processor with 1 tsp olive oil and cumin and blitz to a rough paste, then season well.

Serve drizzled with the remaining 1 tsp olive oil and garnished with a few extra whole peas and the pickled onions. Serve with vegetable crudités.
