Pasta with homemade tomato sauce

1 large, red, finely chopped
1 pinch, and freshly ground black pepper
Vegetable stock cube
1 cube(s), vegetable, make up to 150ml with hot water
White pasta, dry
350 g, shapes
4 leaf/leaves, to garnish
- Spray the low fat cooking spray in a large heavy-based saucepan and gently fry the garlic for 1 minute. Add the onion and some salt and pepper. Cook over a medium heat for 4-5 minutes, stirring often, until soft and golden.
- Add the tomatoes and stock to the saucepan. Reduce the heat and simmer gently, uncovered, for about 40 minutes, stirring occasionally. Reducing the sauce concentrates it to give a rich, delicious flavour. Check the seasoning, adding more salt and pepper, if needed. If you like, use a stick blender to partially blend the sauce.
- Cook the pasta shapes for 8-10 minutes, or according to pack instructions. Drain well, then return to the saucepan and add the tomato sauce. Stir and re-heat gently for a few moments, then serve, garnished with basil leaves.
