Vegetarian parmesan style hard cheese

Instructions

Preheat the oven to 220°C, fan 200°C fan, gas mark 7, and line a baking sheet with baking paper. Toss the broccoli florets with the olive oil and lemon juice, then spread out on the prepared baking sheet and roast for 15 minutes.

Scatter over the grated cheese, season to taste, then roast for another 3 minutes until the cheese is melted.

Scatter over the grated lemon zest and serve immediately.
