Parma Ham, Rice and Rocket Salad

Ingredients
Brown Rice, dry
75 g, and 25g wild rice
Vegetable stock cube
½ cube(s), or 1 tsp vegetable stock powder
Rocket
40 g, wild
Cherry Tomatoes
10 individual, halved
Parma Ham
6 slice(s), thin
Capers, in Brine
2 tablespoon(s), rinsed and drained
Lemon Juice, Fresh
2 tablespoon(s)
Calorie controlled cooking spray
5 spray(s), and 2 tsp olive oil
Wholegrain Mustard
2 teaspoon(s), heaped
Oregano, Dried
1 teaspoon(s), level
Chives, Dried
1 teaspoon(s), level
Salt
1 pinch, and black pepper, freshly ground
Instructions

Cook the brown and wild rice together in lightly salted simmering water with the stock cube or powder for 30-35 minutes, until tender. Rinse with cold water and drain thoroughly.

Toss the rice with the rocket and cherry tomatoes, then share between 2 serving plates. Tear the Parma Ham slices on top, then sprinkle with the capers.

Mix together the lemon juice, olive oil, mustard and herbs. Season with a little salt and pepper. Drizzle over the salads.
