Tahini paste (Sesame paste)

- Put the chickpeas in a food processor, reserving a spoonful to garnish. Add the lemon juice, olive oil, tahini, garlic, cumin and 3 tbsp of the reserved chickpea water. Whizz until smooth. Season to taste.
- Spoon into a bowl and top with the reserved chickpeas. Dust with the paprika and drizzle with the remaining oil.
