One-pot taco pasta

Combine two family favourites—pasta night and taco night—into one pan.


Ingredients

Extra lean beef mince (5% fat), raw
350 g
Onion
1 medium, finely diced
Garlic
3 clove(s), crushed
Ground Cumin
1 teaspoon(s), level
Tinned Tomatoes
1 can(s), large
Yellow lentil pasta
240 g
Half fat Cheddar cheese
80 g, grated
Fresh Salsa (no oil)
4 tablespoon(s)
Sliced green jalapeños in brine
2 tablespoon(s), drained, optional
Instructions

Coat a large nonstick frying pan with cooking spray and heat over medium-high. Cook the beef, onion, garlic and cumin for 5 minutes, stirring frequently to crumble the meat, until the beef is browned. Season with salt and pepper.

Add the tomatoes and 450ml water and bring to a boil. Break the pasta in half and add to the pan. Stir gently to combine. Cover and reduce heat to medium-low. Cook for 10-12 minutes, until the pasta is tender and most of the liquid is absorbed.

Remove the pan from the heat. Top the pasta with the grated cheese, salsa, and jalapeños (if using).
