This one-pot chilli packed with veg and served with parsley is sure to be a hit with the whole family!

Ingredients

Olive Oil

4 teaspoons

Onion(s)

2 large, diced

Chilli, Green or Red

2 individual, deseeded and diced

Carrots, raw

3 medium, diced

Tomato

4 large, diced

Sweetcorn, canned, drained

1 can(s), medium

Kidney Beans, cooked

1 can(s), large, drained

Quinoa, Dry

200 g

Vegetable stock cube(s)

1 cube(s), 1 litre stock

Parsley, fresh

1 tablespoons, chopped

Instructions

  1. Heat the oil in a pan over medium heat. Once heated add the onions and chillies, cook stirring for 2 minutes or until soft. Add the carrots & tomatoes, cook for a further minute.
  2. Add the sweetcorn, kidney beans, quinoa & the stock. Cook, covered for 20 minutes. Season to taste and serve with the parsley.
