Cherry tomatoes, lemon and olives add a Mediterranean twist to this quick fish supper

Ingredients

Calorie controlled cooking spray

1 large, finely sliced

Garlic

2 clove(s), crushed

Tinned Tomatoes

2 can(s), large

Olives, in Brine

1 zest(s) of 1

Lemon Juice, Fresh

2 tablespoons

Cod, raw

4 fillet(s), medium

Parsley, fresh

1 tablespoons, roughly chopped

Instructions

  1. Mist a deep pan with cooking spray and place on a medium heat. Add the onions and cook for 5-6 minutes, until softened. Add the garlic and cook for a further minute, then tip in the tomatoes. Bring to a boil, then reduce the heat. Stir in the olives and lemon juice and season to taste.
  2. Nestle the cod fillets in the mixture and cover the pan. Simmer for 10 minutes or until the fish is cooked through. Garnish with the parsley and lemon zest. Season to taste and serve from the pan.
