Cookies are great to dish out when you have guests, and these are fab for a little treat with a cup of tea!


Ingredients
Plain White Flour
75 g, plain
Co-op Healthier Choice Oatmeal, Quick Cook, Raw
200 g
Baking powder
½ teaspoon(s), level
Ground Cinnamon
1 teaspoon(s), level
Cloves, Whole or Ground
¼ teaspoon(s), level
Ground Ginger
½ teaspoon(s), level
Butter
115 g, softened
Light Brown Sugar
150 g
Caster Sugar
50 g
Egg white, raw
1 g

Preheat the oven to Gas Mark 4/180°C/350°F.

Mix together the flour, oats, baking powder, salt, cinnamon, cloves and ginger, set aside.

In a large mixing bowl, cream together the butter and sugars until pale and fluffy, add the egg white and beat well. Add the dry ingredients and mix thoroughly until well combined.

Divide the mixture into 32 balls and place well apart onto 2 to 3 non-stick baking trays, press each cookie down lightly with the back of a spoon then bake for 12-15 minutes.

Remove to a wire rack to cool and crisp up.
