The perfect start to a busy day, this deliciously filling smoothie is topped with caramelised oats.

Ingredients

Porridge oats

50 g, 40g, plus 10g extra for sprinkling

Demerara Sugar

1 teaspoon(s), level

Ground Cinnamon

1 pinch

Banana

1 medium

Unsweetened Soya Milk

300 ml

Vanilla Extract

¼ teaspoon(s), level

Agave Syrup

1 teaspoon(s), level

Instructions

  1. Dry-fry the extra 10g porridge oats with the demerara sugar and cinnamon in a pan over a medium heat for 2-3 minutes until the oats are toasted and the sugar has caramelised. Remove from the heat and set aside.
  2. In a blender, whizz the 40g porridge oats, banana, soya milk, vanilla extract and agave until smooth.
  3. Pour the smoothie into the glasses and serve topped with the toasted oat mixture.

Notes

Smoothies are a great way to use over-ripe bananas. You could also add blueberries for a fruity twist.
