Want all the fresh flavours of summer all in one hit? Your wish will come true with this deliciously fruity dessert

Ingredients

Fine Leaf Gelatine

5 sheet(s)

Artificial sweetener

4 tablespoon(s)

Elderflower Cordial

45 ml, 3 tbsp

Nectarine

2 medium

Mint, Fresh

4 sprig(s)

Instructions

  1. Soak the gelatin leaves in cold water until soft. Place the sweetener in a small saucepan with 475ml water over a low flame and gently heat for 1 min. Remove from the heat. Squeeze out the excess water from the gelatin, add to the liquid and stir until melted. Add the cordial and stir well.
  2. Roughly chop the mint leaves and add to 6 small serving glasses along with a few slivers of nectarine. Add half the liquid and transfer to your fridge for approx. 3 hrs or until softly set.
  3. Add the remaining mint and nectarine slivers and top up each glass with the remaining liquid. Transfer to your fridge for at least 4hrs, preferably overnight.
  4. Once ready to serve, top each jelly with the finely chopped nectarine and garnish with the small mint leaves.

Notes

You could use any fruit you like in this jelly recipe. Blueberries would work particularly well with the elderflower and mint flavours.
