A Tex Mex inspired savoury snack that can be rustled up in moments and is prefect for sharing.

Ingredients

Light feta cheese

90 g, crumbled

Tortilla chips

150 g

Black beans in water

180 g

Spring Onions

4 medium, sliced

Cherry Tomatoes

6 individual, diced

Coriander, fresh

6 tablespoon(s), chopped

Lime Juice, Fresh

2 tablespoon(s)

Instructions

  1. Combine all the ingredients for the salsa and season to taste. Serve on a platter or divide among 6 individual serving bowls. Serve with the crumbled feta and lime wedges, and arrange the tortilla chips around the edge.

Notes

Black beans are widely used in South American cuisine. They are small and creamy – perfect for salsa. If you can’t find them, use the same amount of black eyed beans instead. Just remember to adjust the SmartPoints.
