Mozzarella and tomato salad with red onion and olive gremolata

Enjoy this simple salad, that makes a great starter or light meal.
Light Mozzarella250 g, drained and sliced
Tomato4 large, sliced
Black pepper⅛ teaspoons, Gremolata:
Olives, in Brine40 g, finely chopped
Onion(s)¼ small, use red, finely chopped
Lemon(s)1 medium, finely grated zest of
Parsley, fresh3 tablespoons, chopped
Olive Oil2 teaspoons
Morrisons Red Wine Vinegar2 teaspoons
- Arrange an equal amount of mozzarella and sliced tomatoes onto 4 serving plates. Season with black pepper.
- Mix together the olives, onion, lemon zest, parsley, olive oil and vinegar. Season with a little salt, then sprinkle over the mozzarella and tomatoes. Serve at room temperature to appreciate the flavours.
