Olive, mozzarella & tomato salad

Enjoy this simple salad, that makes a great starter or light meal.


Ingredients
Light Mozzarella
250 g, drained and sliced
Tomato
4 large, sliced
Black pepper
⅛ teaspoon(s)
Olives, in Brine
40 g, finely chopped
Onion
¼ small, use red, finely chopped
Lemon
1 medium, finely grated zest of
Parsley, fresh
3 tablespoon(s), chopped
Olive Oil
2 teaspoon(s)
Red wine vinegar
10 ml
Instructions

Arrange an equal amount of mozzarella and sliced tomatoes onto 4 serving plates. Season with black pepper.

Mix together the olives, onion, lemon zest, parsley, olive oil and vinegar. Season with a little salt, then sprinkle over the mozzarella and tomatoes. Serve at room temperature to appreciate the flavours.
