Mozzarella and tomato salad with red onion and olive gremolata

Enjoy this simple salad, that makes a great starter or light meal.
Ingredients
  • Light Mozzarella
    250 g, drained and sliced
  • Tomato
    4 large, sliced
  • Black pepper
    ⅛ teaspoons, Gremolata:
  • Olives, in Brine
    40 g, finely chopped
  • Onion(s)
    ¼ small, use red, finely chopped
  • Lemon(s)
    1 medium, finely grated zest of
  • Parsley, fresh
    3 tablespoons, chopped
  • Olive Oil
    2 teaspoons
  • Morrisons Red Wine Vinegar
    2 teaspoons
Instructions
  1. Arrange an equal amount of mozzarella and sliced tomatoes onto 4 serving plates. Season with black pepper.
  2. Mix together the olives, onion, lemon zest, parsley, olive oil and vinegar. Season with a little salt, then sprinkle over the mozzarella and tomatoes. Serve at room temperature to appreciate the flavours.
