- Preheat the oven to 200°C, fan 180°C, gas mark 6. Mist a bunch of trimmed baby carrots with cooking spray and scatter over the Moroccan spice mix.
- Roast for 15 minutes, or until tender. Then, drizzle over lemon juice and scatter over chopped fresh mint. Serve with lemon wedges.
