Cool down on warm evenings with this sorbet-like dessert bursting with Cuban flavours

Ingredients

Billington's Unrefined Golden Caster Sugar

100 g

Lime(s)

4 medium, zest of

Lime Juice, Fresh

8 tablespoons, juice from the 4 zested limes

Rum

80 ml, white rum

Mint, Fresh

30 g, very finely chopped, keep a few whole leaves to decorate

Instructions

  1. Dissolve the sugar in 650ml boiling water; set aside for 10 minutes. Stir in the lime zest, juice and rum. Pour into a freezer-proof container and freeze for 30 minutes, until ice crystals have begun to form. Break the ice up with a fork then return to the freezer. Repeat every 30 minutes, for 3-4 hours, until frozen.
  2. Stir in the chopped mint, then divide between glasses and serve decorated with the lime wedges and extra mint.

Notes
