For breakfast on the run, a packed lunch treat or a satisfying snack, try this nutritious fruit, nut and seed bar.

Ingredients

Calorie controlled cooking spray

Dates, dried

100 g

Porridge oats

200 g

Salt

1 pinch

Sultanas

100 g

Linseed (Flaxseed)

50 g

Sunflower Seeds

50 g, or pumpkin seeds

Hazelnuts

50 g, roughly chopped

Almonds

50 g, roughly chopped

Muscovado Sugar

75 g, light

Evaporated Milk

1 can(s), small, 170ml

Vanilla Extract

1 teaspoon(s), level

Egg, whole, raw

3 medium, raw, beaten

Instructions

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Spray a 20cm (8 inch) square baking tin with cooking spray. Line with nonstick baking parchment.
  2. Mix together the porridge oats, sultanas, dates, linseeds, pumpkin or sunflower seeds, hazelnuts and almonds. Stir in the sugar.
  3. Beat the evaporated milk, vanilla extract and eggs together. Stir into the dry ingredients, then pour into the prepared tin and level the surface.
  4. Bake for 20-25 minutes until set and golden. Cool in the tin for 20 minutes, then remove and trim the edges. Cut into 16 fingers. Store in an airtight tin or wrap and freeze in a rigid freezer box.

Notes

Use raisins instead of sultanas or dates and try brazil nuts instead of hazelnuts or almonds.
