Mixed Beans, cooked
1 can(s), large, drained, in water, drained and rinsed
Capers, in Brine
1 tablespoon(s), drained
Spring Onions
2 medium, trimmed and finely chopped
Cucumber
¼ individual, extra large, finely chopped
Red pepper
½ medium, deseeded and finely chopped
Mint, Fresh
2 tablespoon(s), finely chopped
Lemon
½ zest(s) of 1, grated
Lemon Juice, Fresh
1 tablespoon(s)
Olive Oil
1 tablespoon(s), extra virgin
Instructions

Drain and rinse a tin of mixed bean salad in water, then put in a serving bowl with the capers, spring onions, cucumber, red pepper, mint, lemon juice & zest and the olive oil. Stir to combine, then serve.
