Miso fish with spinach rice

This Asian inspired dish is so simple to make. The miso paste add a delicious savoury note to the fish


Ingredients
Miso
75 g
Soy Sauce
1 tablespoon(s)
Mirin
2 tablespoon(s)
Caster Sugar
1 tablespoon(s)
Sesame Oil
2 teaspoon(s)
Cod, raw
4 fillet(s), medium
Brown rice, microwaveable
2 pouch(es)
Spinach
250 g, frozen
Edamame Beans, cooked
200 g
Broccoli, raw
200 g, tenderstem
Pickled sushi ginger

Instructions

Put a large foil-lined baking tray under the grill. Preheat the grill to high. Combine the miso, soy sauce, mirin, sugar and sesame oil in a medium bowl. Add the fish and turn to coat

Carefully remove the hot baking tray from under the grill and arrange the fish on the tray. Grill for 6-8 minutes on one side or until the fish is just cooked through (be careful that the coating on the fish doesn’t burn).

Meanwhile, fill and boil the kettle. Pour the boiling water into a large saucepan, add the broccoli and return to the boil over a high heat for 3-5 minutes. Microwave the rice, spinach and soya beans according to pack instructions. Combine the rice, spinach and soya beans in a large bowl. Serve the fish with the spinach rice, broccoli and pickled ginger.
