Mini plum turnovers

Using ready-rolled pastry makes these fruity treats simple to make. Serve warm as a dessert, or cold for teatime.


Ingredients
Plums
250 g, halved, stones removed and roughly chopped
Star Anise
1 individual
Cinnamon Stick
1 stick(s)
Agave Syrup
1 tablespoon(s), level
Ready rolled light puff pastry sheet
315 g
Egg, whole, raw
1 medium, raw, beaten
Icing Sugar
2 teaspoon(s), level, to decorate

Put the plums in a pan with the star anise, cinnamon and agave syrup. Cover and cook over a low heat for 5 minutes, until the plums start to soften. Remove the lid and continue to cook until sticky. Remove from the heat and set aside to cool, then discard the star anise and cinnamon stick.

Preheat the oven to 200°C, fan 180°C, gas mark 6 and line a baking sheet with baking paper. Unroll the pastry on your work surface and cut into 12 x 8cm squares, discarding the trimmings. Put a spoonful of the spiced plum mixture on one corner of each square, then brush a little of the beaten egg around the edges. Fold over one corner to create a triangle and press with your fingers to seal the edges.

Put the turnovers on the prepared baking sheet and brush with the remaining egg. Bake for 15 minutes, or until crisp and golden. Leave to cool for 10 minutes, then serve dusted with icing sugar.
