Mini lime cheesecake tarts
These mini dessert treats are filled with a zesty soft cheese and lime mixture, and use ready-made tart cases, which makes them super-quick to prepare.
Medium fat soft cheese
0% fat natural Greek yogurt
Lime Juice, Fresh

Toasted flaked almonds
- Put the soft cheese and yogurt into a medium bowl and stir until smooth and combined, taking care not to overmix or it will become runny. Beat in the sugar, lime juice, vanilla and half the lime zest. Refrigerate for 1-2 hours to firm up.
- Spoon the mixture into the mini tart cases, scatter over the remaining lime zest and top with the flaked almonds. Serve immediately.
You can make the filling up to 2 days ahead but it’s best to fill the tart cases just before serving so they stay crisp.
