  1. Preheat the oven to Gas Mark 5, 190°C, fan oven 170°C. Spray four holes of a deep muffin tin with the cooking spray. Stack two slices of ham on top of each other, then gather up the edges and pop into one of the holes in the muffin tray. Press the ham down to make a ‘case’ – it doesn’t matter if it gathers slightly in places. Repeat with the remaining ham to fill four holes.
  2. In a jug beat together the eggs and milk and season with a little salt and a generous amount of pepper. Pour the mixture carefully into the ham cases until it almost comes to the top. Snip over the chives.
  3. Bake the quiches for about 15 minutes until the filling is just firm. Leave to cool in the tin, then ease out each quiche using a knife. Serve two quiches per person.
