Mexican-style refried beans
You can pair these beans with fajitas, burritos, or other Mexican dishes, but we love them best in a hearty taco!

1 small, diced

Pinto Beans, cooked
1 can(s), large, drained
Lime Juice, Fresh
- Mist a small nonstick pan with cooking spray and put over a low-medium heat. Add the onion with a pinch of salt and cook for 5-7 minutes, stirring often until very soft. Stir in the garlic and cumin, cook for 30 seconds, then add the beans and 100ml water. Cover and simmer for 5 minutes, then stir in the lime juice.
- Purée the mixture in a blender or food processor until creamy, adding more water as needed.
