A tasty take on corn on the cob


Ingredients
Corn on the cob, raw
4 medium, husks removed
Calorie controlled cooking spray
4 spray(s)
Reduced Fat Mayonnaise
50 g
Coriander, fresh
1 tablespoon(s), small handful
0% fat natural Greek yogurt
2 tablespoon(s)
Lime Juice, Fresh
1 teaspoon(s)
Lime
½ zest(s) of 1
Chilli Powder
½ teaspoon(s), level, mild
Garlic
1 clove(s), crushed
Feta Cheese
60 g, crumbled
Lime
1 medium, wedges to serve

Set a large nonstick griddle pan over a medium heat. Mist the corn cobs all over with cooking spray and griddle for 12 minutes, turning occasionally, until the corn is tender and lightly charred all over.

Meanwhile, combine the mayonnaise, coriander, yogurt, lime zest and juice, chilli powder and garlic in a small bowl.

Brush the mayonnaise mixture over the griddled corn, then scatter 15g of the feta over each cob, followed by the extra chilli powder. Serve immediately, with the lime wedges on the side.
