Ingredients

Egg, whole, raw

2 medium, raw

Quark, fat free, plain

250 g

Chorizo Sausage

25 g, finely diced

Light feta cheese

60 g

Tomato

1 large, diced

Spring Onions

3 medium, trimmed and sliced

Red pepper

1 medium, deseeded and diced

Paprika

¼ teaspoon(s), level, smoked

Chipotle paste

3 g

Lime Juice, Fresh

1 tablespoon(s)

Spinach

50 g, shredded

Calorie controlled cooking spray

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Lightly whisk the eggs in a large bowl. Beat in the quark until the mixture is smooth.
  2. Add all the other ingredients (reserving some of the feta) except the spinach and cooking spray. Season to taste, stir to combine, then fold in the spinach.
  3. Mist a 22cm tart tin with cooking spray and pour in the quiche mixture. Top with the reserved feta and bake for 25-30 minutes until golden. Let cool in the tin, then cut into wedges and serve.

Notes

Try serving this with a side salad of mixed leaves, sliced tomatoes and cucumber.
