These pitta pockets transform a tossed Greek-style mix into a portable meal packed with bright flavours of fresh dill, spring onions and lemon. The layer of houmous also prevents the bread from going soggy.

Ingredients

Tomato

2 large, chopped

Cucumber

½ individual, medium, chopped

Spring Onions

2 medium, thinly sliced

Dill, Fresh

2 tablespoon(s), chopped

Lemon Juice, Fresh

2 tablespoon(s)

Wholemeal Pitta Bread

2 medium

Morrisons Sundried Tomato & Basil Houmous

60 g

Salad leaves

4 handful serving

Light feta cheese

80 g, crumbled

Instructions

  1. In a medium bowl, combine the tomatoes, cucumber, spring onions, dill and lemon juice. Set aside.
  2. Split the pittas crosswise to form 4 pockets. Spread 1 tablespoon of houmous inside each pocket.
  3. Gently stir the leaves and feta into the tomato mixture. Divide the salad among pitta pockets.
  4. Serve immediately. Or wrap in plastic wrap and refrigerate for up to 6 hours.
