Marvellous minestrone

This minestrone is marvellous because it fills you up and keeps you satisfied. It’s a great take-to-work option too.


Ingredients
Onion
1 large, chopped
Garlic
2 clove(s), crushed
Carrots, boiled
70 g, chopped
Celery, cooked
3 stick(s), sliced thinly
Swede
½ small, chopped
Borlotti beans, cooked
1 can(s), large, drained, drained
Tinned Tomatoes
400 g
Tomato Purèe
2 tablespoon(s), level
Dried Mixed Herbs
1 tablespoon(s)
Green Beans
100 g, trimmed and sliced
Black pepper
1 pinch
Basil, fresh
1 leaf/leaves
Fresh Vegetable Stock
1500 ml
White pasta, dry
50 g
Instructions

Place all the vegetables into a large lidded saucepan, then add the tomato puree, tinned tomatoes and stock. Bring to the boil, then simmer for 20-25 minutes. Until the vegetables are tender.

Add the pasta shapes and green beans. Stir well, then cook for a further 8-10 mins, until the pasta is tender. Season then serve, topped with a few basil leaves.
