Ingredients

Low Fat Spread

Onion

100 g, frozen, diced

Garlic

3 clove(s), finely chopped

Tinned Tomatoes

1 can(s), large

Thyme, Fresh

3 sprig(s)

Caster Sugar

½ teaspoon(s)

Salt

½ teaspoon(s)

Basil, fresh

2 tablespoon(s), chopped

Instructions

  1. Melt 1 tablespoon low-fat spread in a large pan over a medium heat. Add 100g frozen diced onion and cook for 6-8 minutes until softened. Add 3 finely chopped garlic cloves and cook for a further minute until fragrant.
  2. Add a 400g tin chopped tomatoes to the pan along with 150ml water, then stir in 3 sprigs fresh thyme, 1⁄2 teaspoon caster sugar and 1⁄2 teaspoon salt. Bring to the boil, then reduce the heat and simmer for 15 minutes until reduced and thickened.
  3. Remove from the heat and stir in 2 tablespoons chopped fresh basil, then serve with your choice of cooked pasta.

Notes

The sauce can be frozen in an airtight container for up to 3 months.
