Juicy mango slices and coconut yogurt are topped with caramelised coconut.

Ingredients

Mango

3 medium, ripe, peeled

Freshly squeezed orange juice

2 serving(s)

Demerara Sugar

2 tablespoon(s), level

Desiccated Coconut

1 tablespoon(s)

Plain soya yogurt with coconut

200 g

Instructions

  1. Stand each mango on its end and cut down either side of the stone as close as you can so you have thick slices. Cut each slice into chunky wedges and put in a large baking dish. Drizzle the orange juice over the mango.
  2. Preheat the grill to high. Crush the sugar with the coconut using a pestle and mortar or mini food processor.
  3. Spoon the yogurt over the mango, then scatter the sugar and coconut mixture over the yogurt. Grill for 3-5 minutes until the sugar melts and caramelises. Serve warm, or chill in the fridge and serve cold.
