Ingredients

Onion

1 medium, halved thinly sliced

Carrots, raw

1 medium, cut into matchsticks

Red pepper

1 medium, thinly sliced

Mushrooms

100 g, shiitake, sliced

Garlic

2 clove(s), crushed

Chilli, green or red

1 individual, finely chopped, plus extra to serve

Root Ginger

Cabbage

250 g, shredded

Vegetable stock cube

¼ cube(s)

ABC Kecap Manis (Sweet Soy Sauce)

1 tablespoon(s), level

Courgette

600 g, spiralised

Coriander, fresh

Lime Juice, Fresh

Instructions

  1. Lightly spray a large nonstick wok or frying pan with cooking spray and heat over high heat. Stir-fry the onion, carrot, pepper and mushrooms for 5 minutes. Add the garlic, chilli, ginger, snow peas and cabbage, stir-fry for a further 1 minute.
  2. Dissolve the stock cube in 1 tablespoon boiling water in a small jug. Add the stock, kecap manis and courgette to wok, stir-fry for 2 minutes or until vegetables are just tender. Add the coriander and lime juice and toss to combine. Serve with extra sliced chilli and lime wedges.
