- Preheat the oven to 200°C, fan 180°C, gas mark 6. Line 2 large baking sheets with baking paper. Put the chips and egg white in a large bowl, season and toss to combine. Spread the chips on the baking sheets, in a single layer, and bake for 25-30 minutes, or until golden.
- Meanwhile, make the toppings. To make a salsa, combine ⅔ of the tomato in a bowl with the pepper, coriander and ½ the onion. Season to taste. To make a guacamole, put the avocado, lime juice, chilli and the remaining tomato and onion in a small bowl. Season to taste and stir to combine.
- Serve the chips loaded with the salsa, guacamole and soured cream.
Tossing potatoes in egg white before baking gives them a delicious crunch.
