The ultimate comfort food – and there’s not a fryer in sight!

Ingredients

Potato(es), Raw

750 g

Egg white(s), raw

1 individual

Tomato

4 large

Coriander, fresh

1 tablespoons

Red onion(s)

¼ small

Avocado pear

1 medium

Lime Juice, Fresh

2 teaspoons

Chilli, Green or Red

1 individual

Reduced Fat Soured Cream

80 ml

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Line 2 large baking sheets with baking paper. Put the chips and egg white in a large bowl, season and toss to combine. Spread the chips on the baking sheets, in a single layer, and bake for 25-30 minutes, or until golden.
  2. Meanwhile, make the toppings. To make a salsa, combine ⅔ of the tomato in a bowl with the pepper, coriander and ½ the onion. Season to taste. To make a guacamole, put the avocado, lime juice, chilli and the remaining tomato and onion in a small bowl. Season to taste and stir to combine.
  3. Serve the chips loaded with the salsa, guacamole and soured cream.

Notes

Tossing potatoes in egg white before baking gives them a delicious crunch.
