Lime & lemongrass jellies

Enjoy the refreshing flavour of these fizzy, fruity, sophisticated jellies.


Ingredients
Lemon grass stems
1 individual, cut into short lengths
Water
200 ml
Gelatine
30 g, approx. 1½ tbsp
Lime
2 medium, 6 tbsp juice, and finely grated rind from both
Artificial sweetener
2 tablespoon(s)
Diet Lemonade
450 ml, or diet ginger ale
Lime
1 medium, sliced, to decorate
Kiwi Fruit
1 medium, sliced, to decorate
Instructions

Bash the pieces of lemongrass with a rolling pin to bruise them, then add then to the saucepan with the water. Heat and simmer for 15 minutes, or until the water has reduced slightly.

Strain the very hot lemongrass flavoured water into a large jug and sprinkle in the powdered gelatine. Stir, then allow to dissolve. (This will take about 3-4 minutes).

Stir the grated lime rind and juice into the gelatine liquid with the powdered sweetener. Add the lemonade or ginger ale. Pour into 4 glasses, then transfer to the fridge to set and chill. This will take about 2 hours.

Serve the jellies, decorated with lime and kiwi slices. For Christmas or New Year, decorate the jellies with exotic fruit, such as slices of carambola (star fruit) or physalis.
