Soufflé omelettes are simple and quick to cook, yet look and taste amazing.

Ingredients

Lemon

1 zest(s) of 1

Lemon Juice, Fresh

2 teaspoon(s)

Egg white, raw

4 individual

Caster Sugar

15 g

Calorie controlled cooking spray

4 spray(s)

Icing Sugar

2 teaspoon(s), heaped

Instructions

  1. Finely grate the zest from the lemon. Whisk the egg whites in the bowl using the hand-held electric whisk, until they hold their shape. Gradually add the sugar, whisking well until the egg whites are stiff and glossy. Whisk in the lemon zest.
  2. Preheat the grill, warming 2 serving plates under it. Heat the non-stick frying pan on the hob and spray with the cooking spray. Add half the whisked egg white, spreading it to cover the surface of the pan, and cook over a low heat until the base has set – about 2 minutes. Transfer to the grill to set the surface.
  3. Slide the omelette on to a warmed plate and cook the second one in the same way. Fold the omelettes and serve dusted with icing sugar. Slice the lemon into wedges for squeezing juice over the top.
