A Saag is an Indian-style dish containing spinach. Serve with rice (either basmati or plain long-grain).

Ingredients

Calorie controlled cooking spray

Onion

1 large, chopped

Garlic

4 clove(s), crushed

Turmeric

2 teaspoon(s)

Curry Powder

1 teaspoon(s), garam masala

Cardamom, ground

2 teaspoon(s), level, crushed

Bay leaf, dry

1 leaf/leaves

Split Red Lentils, dry

480 g

Vegetable stock cube

2 cube(s), (make 1 3/4 pints)

Spinach

240 g, chopped, frozen

Instructions

  1. Mist a large saucepan with cooking spray and fry the onion until golden brown.
  2. Stir in the garlic and spices and fry gently for 1 minute, until lightly toasted.
  3. Add the lentils and stock and season well. Simmer for 15-20 minutes or until the lentils are just tender, adding extra stock if the pan becomes dry.
  4. Stir in the chopped spinach and cook for a further 5 minutes, stirring frequently, until the spinach is cooked. Season to taste.
