New potatoes, boiled

Salmon, grilled

Broccoli, boiled

80 g

Light feta cheese

Instructions

  1. Whisk together the olive oil, lemon zest and juice in a large bowl, then stir through the herbs. Add the potatoes and broccoli to the bowl and toss until the vegetables are well coated in the dressing.
  2. Serve the salad on a plate with feta crumbled over. Flake the salmon with a fork and serve on top of the salad, seasoned to taste.
