White pasta, dry
285 g, Spaghetti
Calorie controlled cooking spray
Bacon medallions, raw
125 g, chopped

Egg, whole, raw

20 g, grated
2 tablespoons, finely chopped
- Cook the spaghetti in a large pan of boiling water to pack instructions, or until just tender. Drain, reserving 60ml of the cooking water.
- Meanwhile, mist a medium nonstick frying pan with cooking spray and set over a medium heat. Add the bacon to the pan and cook, stirring, for 3-5 minutes or until crisp. Add the garlic and cook, stirring, for 1 minute or until fragrant.
- Whisk together the eggs, Parmesan and half the parsley in a medium bowl until combined. Add the cooked pasta to the pan along with the egg mixture and toss to combine, adding the reserved cooking water to loosen.
- Season with freshly ground black pepper and serve with the remaining parsley scattered over.
