Lasagne tortilla chips with tomato salsa

2 large, diced

- Preheat the over to 200°C, fan 180°C, gas mark 6 and bring a large pan of water to the boil. Add the lasagne sheets and cook for 2 minutes until softened but not fully cooked. Drain and let cook slightly, the cut each into 8 equal triangles.
- Line a baking sheets with baking paper and mist with the cooking spray. Arrange the lasagne triangles in a single layer and mist again with the spray. Bake for 10 minutes, turning once, until crisp and golden brown. Season with salt, freshly ground black pepper and paprika.
- In a bowl, combine the tomatoes, red onion, green chilli and coriander along with a good squeeze of lime and seasoning to taste. Serve with the ’tortilla’ chips.
