Lamb Steaks with Herby Chickpeas

Ingredients

Onion

80 g, (red)

Coriander, fresh

2 tablespoon(s)

Feta Cheese

25 g, crumbled

Black pepper

½ teaspoon(s)

Lamb Leg, raw

200 g, 2 x 100g

Chickpeas, cooked

400 g, drained

Mint, Fresh

2 tablespoon(s), chopped

Lemon

½ medium

Olive Oil

1 teaspoon(s)

Instructions

  1. Slice the red onion into thin rings and mix with 2 heaped tabblespoons of fresh coriander and the feta cheese. Season with pepper and set aside.
  2. Preheat the grill to high and line the grill pan with foil.
  3. Season the lamb and grill for 7 minutes, turning once, for pink or 10 minutes for well done. Remove from the heat, cover with foil and rest for 5 minutes.
  4. Meanwhile, drain the chickpeas and boil for 4-5 minutes. Drain and return to the pan. Stir in the mint leaves, olive oil and juice of ½ a lemon. Season and divide between 2 serving plates. Serve with the lamb and onion and feta relish.
