Ingredients

Calorie controlled cooking spray

5 spray(s)

Onion

2 medium, thinly sliced

Garlic

2 clove(s), crushed

Root Ginger

20 g, 2cm (1 inch) piece peeled & grated

Lamb Leg Steak, Lean, Boneless, raw

450 g, cut into chunks

Mixed Spice

1 tablespoon(s), level, (rogan josh powder)

Tinned Tomatoes

1 can(s), large, chopped

Tomato Purèe

2 tablespoon(s), level

Vegetable stock cube

1 cube(s), chicken, made up with 150 ml hot water

Salt

1 pinch

Black pepper

1 teaspoon(s), Freshly ground

Coriander, fresh

1 teaspoon(s), to garnish

Olive Oil

1 teaspoon(s)

Instructions

  1. Spray a large non-stick pan with low fat cooking spray. Heat, add onions and sauté for 3-4 minutes, until softened. Add garlic and ginger and cook for 30 seconds. Add lamb chunks and cook until browned - about 5 minutes. Stir in spice powder.
  2. Add tomatoes, tomato puree and stock. Simmer, partially covered, for 30 minutes, or until the meat is tender, adding more stock, if needed. Season.
  3. Serve the lamb. Garnish with lime wedges and coriander sprigs.
