Ingredients
Lean Lamb Mince (less than 16% fat), raw

Garlic

Rosemary, Fresh

Oregano, Dried
½ teaspoon(s), level
Light feta cheese

Calorie controlled cooking spray

Lettuce

Cherry Tomatoes

Spring Onions

Olives, in Brine

Instructions

Mix together the lamb, garlic, rosemary, oregano and feta. Using wet hands, shape into a patty and flatten.

Heat a non stick frying pan and spray with cooking spray. Add the lamb patty and cook for 5–7 minutes on each side, until cooked through. Leave to rest for 5 minutes.

Meanwhile, make the salsa. Mix together the tomatoes, spring onion, olives, vinegar and parsley and then season.

Serve the burger in the lettuce leaf, topped with the tomato salsa.
