Impress family and friends with this quick and easy lamb and feta burger.

Ingredients

Lean Lamb Mince (less than 16% fat), raw

100 g

Garlic

1 clove(s)

Rosemary, Fresh

1 sprig(s)

Oregano, Dried

½ teaspoons, level

Apetina Light Block (10% Fat) Cheese

25 g

Calorie controlled cooking spray

Lettuce

Cherry Tomatoes

Spring Onions

Olives, in Brine

Vinegar, All Types

1 tablespoons

Parsley, fresh

1 tablespoons

Instructions

  1. Mix together the lamb, garlic, rosemary, oregano and feta. Using wet hands, shape into a patty and flatten.
  2. Heat a non stick frying pan and spray with cooking spray. Add the lamb patty and cook for 5–7 minutes on each side, until cooked through. Leave to rest for 5 minutes.
  3. Meanwhile, make the salsa. Mix together the tomatoes, spring onion, olives, vinegar and parsley and then season.
  4. Serve the burger in the lettuce leaf, topped with the tomato salsa.
