Stir-fries are a great choice for quick meals. This one uses lamb mince and plenty of fresh vegetables.

Ingredients

Olive Oil

2 teaspoons

Lean Lamb Mince (less than 16% fat), raw

400 g

Broccoli, raw

100 g, cut into bite-size pieces

Green Beans

100 g, cut into bite-size pieces

Red pepper(s)

2 medium, deseeded and chopped

Baby corn

1 portion(s), halved

Red onion(s)

1 small, sliced

Brown rice, Microwaveable

2 pouch(es)

Black Beans in Water

150 g

Cornflour

1 teaspoons, level

Instructions

  1. Heat a wok over a high heat. Add the olive oil and heat for 20 seconds, then add the lamb mince and stir-fry for 3-4 minutes or until browned. Add all the vegetables and stir-fry for 4-5 minutes.
  2. Meanwhile, cook the rice according to the pack instructions. Mix the black bean sauce with the cornflour and 60ml water in a small bowl until smooth. Add the sauce mixture to the wok and stir-fry for 1 minute or until heated through. Serve the stir-fry with the rice.
