Key Lime Puddings
These lovely meringue desserts are so quick to make! They taste delicious with their citrus lime tang.
Medium fat soft cheese
2 medium, juice and finely grated rind (use 2 limes)
Egg, whole, raw
3 medium, raw
5 tablespoon(s), powdered
- Preheat oven to Gas Mark 4/180°C/350°F.
- Beat the low fat soft cheese with the milk until smooth and creamy. Add the lime rind and juice, egg yolks and 3 tbsp of powdered sweetener. Share between 4 small heatproof dishes or ramekins. Stand on a baking sheet and bake for 5 minutes.
- Meanwhile, whisk the egg whites in a grease-free bowl until they hold their shape. Whisk in the remaining powdered sweetener.
- Remove desserts from oven and pile the meringue on top. Return to oven to bake for 5 more minutes, until golden.
You could use Quark instead of low fat soft cheese, if you prefer.
