Kale pesto

For a pesto that packs a powerful nutritional punch, whizz up a batch of leafy green kale with the usual fresh, fragrant basil.


Ingredients
Kale, raw
400 g
Basil, fresh
30 g
Vegetarian parmesan style hard cheese
150 g
Garlic
4 clove(s)
Olive Oil
3 tablespoon(s)
Lemon Juice, Fresh
5 tablespoon(s)
Instructions

In 2 batches, blanch the kale for 1 minute in a large pan of salted, boiling water. Drain in a colander and refresh under cold running water. Squeeze out the excess water with your hands.

Put the blanched kale and remaining ingredients into a food processor and whizz to a chunky pesto. Season to taste before portioning and freezing.
