- Spread the kale on a baking tray, mist with calorie controlled cooking spray and sprinkle over the salt.
- Bake at 160°C, fan 140°C, gas mark 3 for 10 minutes, until crispy. Transfer the kale to a blender with the lemon zest and blitz.
- Meanwhile, put the popcorn kernels in a microwave-safe bowl and cover with a vented lid. Microwave on high for 3-4 minutes, until there’s about 5 seconds between pops. Sprinkle the topping over the popcorn.
