A nice and simple but deliciously tasty lunch!

Ingredients

Potatoes, Raw

4 portion(s), large

Cabbage

1 portion(s), small, red and white

Carrots, raw

1 small, peeled and grated

Apple

1 medium, peeled, cored and finely chopped

Pineapple

2 slice(s), chopped

Spring Onions

2 medium, finely chopped

Reduced Fat Mayonnaise

8 tablespoon(s)

Instructions

  1. Bake the potatoes at 180°C, fan 160°C, gas mark 4 for 1 hour until tender.
  2. Meanwhile, combine the remaining ingredients to make the coleslaw. Season and chill in the fridge until potatoes are ready.
  3. Serve the baked potatoes topped with the coleslaw with a salad on the side.
