Jacket potato & fruity coleslaw

1 small, peeled and grated
1 medium, peeled, cored and finely chopped
2 slice(s), chopped
2 medium, finely chopped
Reduced Fat Mayonnaise
- Bake the potatoes at 180°C, fan 160°C, gas mark 4 for 1 hour until tender.
- Meanwhile, combine the remaining ingredients to make the coleslaw. Season and chill in the fridge until potatoes are ready.
- Serve the baked potatoes topped with the coleslaw with a salad on the side.
