Make these delicious mini apple pies to delight your friends and family at your next gathering or simple keep all to yourself. We save time here by using ready rolled pastry sheets and then fill it with a cinnamon-spiked filling made with fresh apples.

500 g, peeled and diced

Dark soft brown sugar

Ground Cinnamon

1 teaspoon(s), level

Lemon Juice, Fresh

Water

1 teaspoon(s)

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6, coat a large size muffin tray with cooking spray.
  2. Place the chopped apples, sugar, apple cider vinegar, cinnamon and lemon juice in a small saucepan, cook over a low-medium heat for 5 -10 minutes, until the apples begin to soften, stirring frequently.
  3. In a small bow, mix together the cornflour and the water to make a paste, then add to the saucepan.
  4. Using a 10cm cookie cutter cut 8 circles out of the pastry (re-roll scraps with a rolling pin as needed). Place the pastry circles in the bottom of the prepared muffin holes, press down on the base and slightly up the sides. Divide the apple mixture among the pastry cases.
  5. Bake for 20-25 minutes, until the pastry is browned and the filling is bubbling. Allow to cool, before removing from the pan. Store at room temperature until ready to serve.
